Strawberry gazpacho

1 puff pastry

250 ml of liquid cream for mounting

100 gr of cream cheese

Stretch the puff pastry sheet until it is very thin, and cut it into three equal sized pieces. Prick with a fork the surface of the three sheets of puff pastry, and put them in the oven at 200 degrees until they are well browned on both sides. Let them cool and reserve.

 

In a bowl we will prepare our whipped cream. This cream will have a special touch, it will be thicker thanks to the cream of cheese. For this we will put in a container the 250 ml of liquid cream and the 100 g of cream cheese. We beat everything until the cream is set to the point of snow, and we add sugar until it is sweet.

 

Once we have the whipped cream, we leave it reserved. We split our pieces of strudel in equal squares, and on each of the squares, with the help of a pastry bag, (if we do not have nothing, we can do it with a spoon), we will put a little pile of cream, and on it , pieces of strawberries cut into slices. Once the composition is done, we put the other puff pastry lid.

 

To decorate, we use glass sugar, which will give that sweet touch to the puff pastry and we decorate some slices of strawberries on top.

For 2 persons

1 small cucumber

350g of strawberries

1 sweet onion

1 little red pepper

1 teaspoon bread crumbs

2 tablespoons of olive oil

1 tablespoon apple cider vinegar

Salt

1 pinch of nutmeg

1 glass of cold water

 

Peel and chop cucumber, onion and pepper. We split the strawberries. We crush all the vegetables next to the strawberries until obtaining a fine cream and we add the oil, the vinegar, salt to the taste and the nutmeg. We add the cold water and the bread crumbs and beat again. We reserve an hour in the refrigerator to cool it down. We quench, beat again, mix with a little ice and serve again with a garnish of strawberries and chopped vegetables and a drizzle of oil.
