The pineapple or Ananas comusus L. It is one of the tropical fruits, of greater importance due to its high demand, both in fresh form and processed in juices, ice creams, slices or segments with syrup. It includes about 1,400 species of plants, almost all herbaceous, evergreen and with very striking flowers. Some of them produce proteolytic enzymes (which disintegrate the proteins of food) and are located mainly in tropical America.

The pineapple has minerals such as potassium, magnesium, calcium, iron and sodium, as well as vitamins A, C and folic acid, and although the contents of these nutrients are not as spectacular as in other fruits, their main active: bromelain or bromelain, an enzyme so powerful that it is capable of digesting approximately a thousand times its weight in proteins, and from which we can obtain 87 milligrams in 10 grams of fruit. It is very suitable for circulation because this component dissolves the clots that can form and fluidizes the blood. This is a good way to avoid circulatory problems such as thrombosis, heart attacks, strokes and at the same time decrease high blood pressure or hypertension. It is very helpful in the process of digestion as it helps the stomach to perform its function, This entails the disappearance of a series of unpleasant side effects related to the heavy digestion of food: intestinal gas, heaviness of stomach, heartburn . It exerts a purifying function of the digestive tract and helps to eliminate the bacteria that cause intestinal putrefaction, responsible for the appearance of pains in the intestines or diarrhea. Bromelain not only digests proteins but has also proven its power to digest fats, which can be applied in the treatment of obesity. The anti-inflammatory power of bromelain makes its use in arthritis treatments very promising: it restores flexibility and reduces pain.

Pork chops with

pineapple sauce

Hot spicy

Pineapple sauce

Season the pork chops with salt and pepper on both sides.

 

Blend half of the pineapple with chicken broth, pineapple juice, sugar, mustard, vinegar and half the bunch of parsley.

 

Cook the chops in a hot pan with oil and butter. Cook for 3 minutes, over medium heat on both sides or until golden brown.

 

Remove the chops from the pan and reserve.

 

Smile the onion and garlic in the same pan where you cooked the chops. If necessary, add a little more oil.

 

Add the pineapple sauce and cook over medium heat for 5 minutes, stirring constantly.

 

Add the chops and the rest of the chopped pineapple to the sauce and cook for 8 minutes.

 

Place the rest of the chopped parsley and serve.

Clean the pineapple, remove the center and cut into small cubes.

 

Pip onion, cilantro and serrano peppers.

 

Mix the ingredients in a sauceboat, finally season with the lemon juice and salt.

 

Refrigerate minimum for 10 minutes.

 

To get a different version, you can add fresh mango cubes.
